You know how cookies at bakeries are soft and chewy because the butter and all the crap? Well, these cookies are exactly the same but without the crap!
They are paleo, grain free, dairy free, vegan and refined sugar free if you use vegan dark chocolate chips.
I have been working on this recipe for months and I am happy to say that it is finally ready to be shared.
They are made with all of my favourite wholesome ingredients: hazelnut butter, coconut flour, coconut oil and brazilian nuts. So they are nutritionally complete. Which it means you can have as many as you want!
They are also dangerously easy to make. Yes, I used the right word because once you try one, you will want to make more and more and more.

The texture of these cookies is unreal. I made so many healthy chocolate chip cookies in my life and they were all good but the texture wasn’t quite there. My favourite cookies are the one crunchy outside and chewy inside, and this recipe ticks all boxes!
Bakery Style Grain Free Cookies
SERVE: MAKES 10 COOKIES
GRAIN FREE, GLUTEN FREE, VEGAN, DAIRY FREE, REFINED SUGAR FREE
Ingredients
3/4 cup hazelnut butter
1/3 cup rice malt syrup
1/4 cup hazelnut milk
Pinch Himalayan Salt
1/4 cup coconut flour
1/4 tsp baking soda
1/4 vegan dark chocolate chips
10 chopped brazilian nuts or macadamia
Instructions
Preheat the oven at 170°C.
Warm up hazelnut butter and rice malt syrup in a saucepan. Whisk to combine until smooth.
Add in hazelnult milk, salt and mix well.
Then add the coconut flour and baking soda and mix it again. If the dough is too sticky, add slowly more coconut flour.
Finally add chocolate chips and brazilian nuts (or macadamia).
Shape the dough into cookie shapes and place on parchment lined baking paper.
Bake for 20 minutes at 170°C.
